You might think they are waste, but really they can make a meal - fishbones and fishheads! I start by collecting all the small pieces of fish from the head and putting it aside for later. Then I cook bones and head for a couple of hours in some water to make a rich broth. Final step: sautée some leeks, add the pieces of fish, add some canned tomatoes (or fresh if it's the season) and the broth and bring it all to a boil.
